MACE

Mace is the outer coating of the nutmeg seed, is removed first and ground into a red-colored spice. Mace is a little spicier and can be described as a combination of pepper and cinnamon. Its flavour is similar to nutmeg but more delicate; it is used to flavour baked goods, meat, fish, and vegetables, and in preserving and pickling.
